Cheesy Corn Casserole

It’s like cornbread, but better. Also known as corn pudding in some circles, this chewy cheesy dish goes great with chili (or anything else, really)!


1 package corn muffin mix (Jiffy 8.5 oz.)

1 can whole kernel corn

1 can creamed corn

1 cup sour cream

2 eggs

1 cup cheese (Cheddar or Monterrey Jack)

1 tsp sugar (brown or white)

Dash of salt

1/2 cup melted butter (optional)


Preheat oven to 375 degrees. Combine all ingredients in a mixing bowl, then pour evenly into a greased 9×13 pan. Bake for 30-40 minutes or until desired consistency. (Some like it soft, like a thick pudding, others prefer it as a moist cornbread)
